Mash the mandarin oranges with your fingers and put them in a pot. Sprinkle granulated sugar and lemon juice evenly over the mandarin oranges and let sit for an hour.

Simmer for about 30 minutes until the mixture thickens, mashing it moderately. Use a spatula to scrape the bottom of the pot to see if it comes back in about 2 seconds. That’s the time you know it’s done.

・ 1 tablespoon of soy sauce
・ 1.5 tablespoon of butter
Mix all the mushrooms, flour, potato starch, and cheese in a bowl, add water little by little, and mix well until the powdery mixture disappears.
Heat butter in a frying pan, pour in the mixture, and cook over medium heat for about 5 minutes.
When the dough starts to brown, turn it over and pour in the soy sauce.
Bake for about 5 minutes, and when the whole dish is browned, cut it into bite-sized pieces.

Bring the milk to a boil in a saucepan, add golden mushrooms, brown shimeji and shiitake and let it boil for a moment.
Add consommé and salt to taste, then turn off the heat.
Serve in a bowl and sprinkle with parsley.

・ 2 cloves of garlic, sliced
・ 7oz of cooked rice
・ 1 teaspoon of parmesan grated cheese
・ 2 tablespoon of consomme powder
・ Salt and pepper to taste
・ Parsley, chopped
・ 4 tablespoon of olive oil
Boil 4cups of water and liquid from canned shiitake in a soup pot and add the consommé powder to make the consommé liquid.
Heat olive oil and garlic in another pot over medium heat. When fragrant, stir in onions,cooked rice, and shiitake mushrooms in that order.
Add a cup of the consommé liquid to the pot. After the liquid is reduced, then add another cup of consommé liquid.
Cook over low-medium heat, stirring constantly to prevent scorching, until al dente, about 20 – 25 minutes.
Remove from heat and season with grated cheese, salt and pepper.
Stir in butter, parmesan grated cheese, and chopped parsley before serving.
